White meat or dark meat??????

I used to stay away from the white meat because it was so dry. Then I learned that slow-cooking the turkey overnight dried it out and was unnecessary. I also learned that you are essentially cooking 2 types of meat, the dark requiring a little more cooking than the light. Sooooo, the trick is to "tent" the white meat for most of the cooking time, only removing the foil the last 1/2 hour. This way you can keep the breasts moist while cooking the dark meat all the way through.

The problem with giblets is that most people include the liver, which makes the dressing/gravy bitter. I save up broth with bits of chicken or turkey and freeze it for awhile before Thanksgiving and Christmas and use that.
