This is a dish best served hot and steaming over some cooked rice or pasta.

Here in the UK we get this at all market stalls; I find it much more tasty than spinach and easy to digest.

Ipomoea aquatica is much more nutritious that normal spinach as it does not contain oxalic acid which inhibits the absorption of its calcium and iron.

Spinach may have provided Popeye with superhuman strength but perhaps water spinach was his secret weapon. Maybe you too can have biceps like tree trunks to get digging in the garden

Pop Eye’s Water Spinach

Estimated cooking time: 25 minutes


Ingredients:

• 1 big bowl of fresh water spinach

• 1/4 kilo of meat chopped and diced into small pieces (I prefer chicken but you can even choose tofu)

• 1/4 cup of vinegar

• 1/4 cup soy sauce

• 5 cloves of garlic, minced

• 1 onion, diced

• 1 cup stock (broth) or bouillon cube dissolved in water (vegetable, chicken, beef etc)

• Salt and pepper to taste

Cooking Instructions:

Sauté garlic and onions in a big pan then add the pork. Allow the meat to sizzle and turn brown and oil for a few minutes.

Add a cup of stock (or bouillon cube dissolved in water or plain water), soy sauce, some salt and bring to a boil.

Let it slowly simmer then add the vinegar. Do not stir for 5 minutes. The vinegar adds a nice sour tang.

Add the stalks first and cook for 1 minute then add the leaves. Continue cooking until the vegetable is limp

it is almost illegal in most of the united states. dont know of a state it is legal in.

Well better than throwing it in the bin; bag it, freeze it and eat it and more nutritious than prison food.

It grows wild in some states as an invasive weed, nothing to say you can't eat that; just make sure it's from a safe water source that is free or e-coli or other bacteria

the laws are really strict around here if you are caught taking it out of the water ways its prison time. it doesnt matter what the reason

for instance we own a boat this stuff and water hyacinth gets in the motor and when you pull the boat out the water the law states you have to toss that stuff in the trash or back into the water. they check the boats on the way out of the state parks to make sure none is taken out of the park. seen people get stopped for having it hang off the motor.

was in flordia took a boat tour the boat got stuck in water hyacinth was told by the boat master not to touch it as its illegal to transport so they tell people not to touch so it doesnt get spread.

aquatica is just as bad here in laws would love to have both in my yard in a pot like Becky had but i know people the law has busted. not for me no matter how good it is to EAT!!!

I make tea using Kudzu and Dokudami and often eat water spinach!
The Japanese swear by these as a heath foods and they live longer!

Jon - Yes! My DIL says her father cooks up the water spinach, too! Amazing! The Asians definitely seem to eat much healthier. Not at all like the fatty foods here in the USA.

LOL! I heard that McD's invaded Japan and other countries! Look out! The Asians will be plump soon too if they eat fried food! Though I did hear that the food served there was different than what is served in the USA.

My son (who's wife is Chinese) said that he has lost weight too. He looks good! He loves Chinese food! :-)
