Here in the UK we get this at all market stalls; I find it much more tasty than spinach and easy to digest. Ipomoea aquatica is much more nutritious that normal spinach as it does not contain oxalic acid which inhibits the absorption of its calcium and iron. Spinach may have provided Popeye with superhuman strength but perhaps water spinach was his secret weapon. Maybe you too can have biceps like tree trunks to get digging in the garden Pop Eye’s Water Spinach Estimated cooking time: 25 minutes Ingredients: • 1 big bowl of fresh water spinach • 1/4 kilo of meat chopped and diced into small pieces (I prefer chicken but you can even choose tofu) • 1/4 cup of vinegar • 1/4 cup soy sauce • 5 cloves of garlic, minced • 1 onion, diced • 1 cup stock (broth) or bouillon cube dissolved in water (vegetable, chicken, beef etc) • Salt and pepper to taste Cooking Instructions: Sauté garlic and onions in a big pan then add the pork. Allow the meat to sizzle and turn brown and oil for a few minutes. Add a cup of stock (or bouillon cube dissolved in water or plain water), soy sauce, some salt and bring to a boil. Let it slowly simmer then add the vinegar. Do not stir for 5 minutes. The vinegar adds a nice sour tang. Add the stalks first and cook for 1 minute then add the leaves.
