I thought I'd revisit this thread and post a new receipt for party leftovers. I was really hungry for chicken salad but kept thinking, "I have all that chicken teriyaki in the freezer". So this is what I came up with, and Holly thought it was quite "Yummy"! Of coarse she says that anytime I feed her. :-) LOL We have a receipt for teriyaki a friend brought back from Okinawa, if anyone would like we can post it also. Ric

Teriyaki chicken salad

1 cup of Teriyaki chicken diced
¼ cup of finely diced fresh pineapple
¼ cup of finely diced unsalted peanuts
1 tbs. peanut sauce or satay
1 tbs. pineapple juice
Dash of white pepper and salt to taste

I started by warming the diced chicken, in the microwave, in a closed container with a few drops of water to ensure it was well hydrated. Then I just mixed it up, rewarmed it, and set it aside till I finished my preparations and served it with a dark buttered toast.

Wow Flowerjen, that's awesome! Let me know how they turn out when you make them. I didn't even realize there were and Acme stores left. Ours has been gone so long I can't even tell people "you know where the old Acme use to be" when trying to tell them where something is.

Needed to bump this thread back up to just let Roses know, I'm using your salad recipe for our womens "In the Kitchen" group at our church.

We had our "family, friends and neighbors get together" at my house and that same salad made a big hit again.
