I think the brown stuff was some sorta brownie that Karlea and Jim made... Yes, the sopapilla cheesecake was the best... That was the first time I tried it, now I am hooked and will be nagging them right along with everyone else to bring some to the next round up...

We need to nag for sopapilla cheesecake and chocolate every year - they were both wonderful! :-)

Here's the recipe:
ORIENTAL COLE SLAW
Make this salad 8 to 24 hours ahead of serving time.
1 lb. cole slaw (I use bagged slaw from the salad section, wash it and spin in my salad spinner to freshen it.)
2 pkgs. Beef flavored Ramen Noodles - crunched up into very small pieces, save the seasoning packets
1 bunch green onions, chopped
1 cup sunflower kernels, or more
1 cup slivered, blanched almonds, toasted
Dressing:
1 cup vegetable oil, I use slightly less
1/2 cup sugar
1/3 cup white or apple cider vinegar
2 seasoning packets from noodle pkgs.
Mix together slaw, dry noodles and onions in large bowl. Mix dressing well and pour over noodle mix. Continue to stir occasionally throughout marinating process. Just before serving, add sunflower kernels and almonds.
Double for church socials and family gatherings, altho one recipe makes alot.
Sidenote: Pineapple chunks with some juice added is a great and refreshing addition to this salad and I like a splash of balsamic vinegar when I eat it.

Recipes for the Sopapilla Cheesecake and the Brownies are coming, I'm just strapped for time right this minute. I'll post them soon as I get a chance. Jim
OK, I think I have some time, now.
Sopapilla Cheesecake
2 Cans large Pillsbury Crescent Rolls
3 8oz. Philadelpia Brand Cream Cheese
2 cups sugar
2 Teaspoons Vanilla
1 stick butter
1 Tablespoon Cinnamon
Keep crescent rolls in refrigerator till needed. Let cream cheese get to room temp.
Mix cream cheese with 1-1/2 cups sugar and 2 teaspoons vanilla until smooth and creamy. Lightly spray 9x13 pan with cooking spray. Unroll one can of crescent rolls, leaving them together as a sheet, and place in pan. Spread cream cheese mix on top. Unroll second can of crescent rolls and place over that. Melt stick of butter, pour over top of rolls. Mix 1/2 cup sugar and Tablespoon of Cinnamon, sprinkle over top. Bake at 350 deg. about 30 minutes or so or until top is browned and bubbly. Let sit for a few minutes after baking so the filling doesn't run everywhere.
Double Brownie Chocolate Stuff
2 Boxes Double Chocolate Brownie Mix
3 Symphony candy bars ( I think they are 8oz, about 4"x8" +/- )
1 Cup chopped nuts if desired
Mix 1 box of brownie mix per directions and place into 9x13 pan. Lay 3 Symphony candy bars on top next to each other and spaced evenly in pan. If you want to put nuts in, spread them across the candy bars now. Mix 2nd box of brownie mix and spread over candy bars. Bake at 350 deg. until brownie mix is firm ( you are making a double batch of brownies, so it will probably take longer than the box directions specify ). Let brownies cool and cut into desired sized pieces.
Obviously, neither of these recipes are low calorie, diet, or good for you. I think that's why they are so popular ;) Hope you enjoy, and you can be the hero of your next party. Got to get back to work, Jim
