Old squash, can I save the seeds?

I just cleaned out the cabinet where i had stored my winter squashes. I found two that had been hidden, and missed. One in pretty rotten, but fairly intact. Can I demolish it and save the seeds? It's a variety I really want again this year, but neglected to save, and couldn't afford to buy, Trombocino. Could I use them this year? Should they dry, and if so, for how long?
The other is a spaghetti squash from 2007. It's in great shape, feels as if i could cut it up and eat it. Is that safe?? I'd like to use seeds from that, as well, as it surely proved to be a Long Keeper!!

I would dry and plant them. I have the same things going on here and plan to plant!!
