Ok - I have never eaten an avocado before.
Tonight I want to make a casserole dish that I came up with a few years ago.. just refried beans, hamburger meat made up like for tacos or left over chicken (tonight it's hamburger), enchilada sauce, can of diced tomatoes, some leftover rice,small can green chili's, can of drained black beans, small can drained corn... add some chopped onion and garlic - heat in oven till hot, top with mixed cheeses, heat till melted. No recipe, just layer and heat.
I always serve it with shredded lettuce, chopped tomato, onion, jar salsa, more cheese, black olives, sour cream - whatever I have on hand. Also tortilla chips to put it on, or taco shells, and also corn tortilla wraps.
Well - when I was at the store, they had campari tomatoes-- they are pretty good. I have sweet onion, and sour cream on hand. They had what feels like a ripe avocado. I got a small can of green chili's I normally put in the casserole. I was thinking - isn't this close to what is needed for guacamole or something good with the avacado? Oh--- I also have a fresh lime on hand.
The avocado is black, wrinkly, and soft to the touch. It had a sticker on that said "ripe and ready to use, handle with care"
What can I do with the avocado to go with my casserole? Neither of us has tasted avocado before - so want to try it in a way we are likely to enjoy it. There are two of us -- the left over casserole will be recycled on Tuesday...
We will eat in about 3-4 hours, so not much notice~ LOL
