Darkmoondreamer: I left a message for my sister to email my dad's favorite recipe for pickled eggs, will make sure I put it up for everyone when she sends it to me ok? I ask for it every year, you'd think I would at least make a copy for myself right? LOL They taste so much better than hard boiled eggs though, got that punch to them and I eat the beets and onions too. LOL

I miss the Mikey commercials. And yep, he'll eat anything.
Here is my Dad's easy Pickled Egg Recipe:
6 hard cooked eggs
2 cans whole beets with juice
1 white or vidalia sweet onion (quartered)
2 c apple cider vinegar
1 c sugar
1 Tbsp salt
1 Tbsp pickling spice
directions: Boil beets, onions, beet juice, vinegar and pickling spice for about a minute. Let cool. Placed peeled eggs and beets in a jar. Pour cooled mixture over eggs and beets and refrigerate. More eggs and beets can be added after you eat up the first batch.
Believe me, you will use this mixture for at least 4 dozen eggs. LOL

Oh wow Joy, thanks! Looks like a great recipe! Do you mean that the "juice" part makes enough for 4 dozen eggs, or that you double the juice part twice to make enough for 4 dozen eggs?

lol I had lap-band a few (5 mths) ago and for some strange reason I've developed a horrendous case of 24/7 heartburn and nausea. If this is what morning sickness is like..Thank the stars I only have furbabies
