Suggestions for Collecting Oregano and Sweet Alyssum Seeds?

I have a Greek oregano (Origanum vulgare hirtum) and a group of Sweet Alyssum plants that are finishing up flowering. I would like to collect seeds from them but am not sure of the best way to go about it.

For the Greek oregano I keep checking the dried flower heads but I bought all my oregano as plants and I'm not really even sure what I'm looking for as far as the seed's appearance. I'm also not sure if I should be waiting for the heads to dry, or bag them, etc.

With the Sweet Alyssum I think I see the seeds developing on the stems but again am unsure if I should be bagging them or if they'll remain there until they're ripe. This is my third year not successfully saving the seeds from these Sweet Alyssums so any advice would be quite appreciated ;)

The oregano seeds are tiny little guys from the dry flower heads. I have collected the seeds in the past, but they are perennial and winter over well here and they also self seed like dill. This photo is from a flower head from my garden today. A good reason to collect seed is that your hands smell great after. Why Simon and Garfunkel neglected this herb escapes me. :-)

Thank you so much, Z - the photo helped immensely. Since I didn't know what I was looking for everything coming off the flower head looked the same, but now I see what portions are the seed. And you're so right - it does smell fantastic!
