Candyce - what is your broccoli bake??

We all MUST have mashed Russet potatoes. That's the only time I use real cream and butter to make them. Only Russets will do because they fluff up so nicely.

For dessert, it will be our traditional apple walnut cobbler and pumpkin pie.

Biscuits with our homemade wild Concord Grape Jelly from the farm.

This year we are going to neighbors' for dinner down here. I will bring the desserts I mentioned and Hank will make his Waldorf salad his mother always made. I'll leave the rest to them....for the first time ever! I have always made the dinner and we've always had it at our house. We had our family dinner at my son's before we left to come south.

It is clear that this is a group that likes to eat well and garden often! LOL

Broccoli Bake is very yummy and not for anyone on a low-cholesterol diet.

I think I can write it out here ...

Broccoli Bake serves 6 - 8
2 10 oz packages of frozen broccoli cuts
1 can of cream of mushroom soup
1 cup of shredded cheese (cheddar works!)
1 egg, beaten
1 sleeve of Ritz crackers
1/4 cup of butter or margarine, melted
1/2 tsp of paprika

Cook the broccoli in a bit of water until just 'done'. Drain.

In a large bowl, combine the cooked broccoli, the cream of mushroom soup, 3/4 cup of the shredded cheese and the beaten egg. Mix well.

Preheat the oven to 350 degrees. Grease an 8 x 8 baking pan; sides too. Pour the broccoli mixture into the baking pan. Top with the remaining shredded cheese.

Crush the sleeve of Ritz crackers. In a small bowl combine the crackers with the melted butter and stir to coat the crackers. Spread this cracker 'topping' evenly over the broccoli mixture in the baking pan. Sprinkle the paprika over the top.

Bake for about 45 minutes to an hour, or until a knife comes out cleanly and the crust is golden brown. Let it stand for about 10 minutes before serving.

It's so yummy! And, you can easily double and triple this recipe if you are feeding a larger crowd. Use a much larger baking pan, of course.

Tday is the only dayI dont care what the glucose looks like.
I have a couple of faves.
Stuffing( just the regular kind)
Mashed Russets ( and a package of prepared mashed,bob Evans in reserve)
Gravey and potatoes have to come out even.
Butternut squash lazagna DD#2 recipe.
DD#1 is bringing pie ,dont know what kind.
Among the 4 daughters we rotate where holidays are spent.
There are 8 adults and 4 teenagers.
