This thread will help narrow down the recipes I'll be saving in my own files. I think the presentation sounds SO cute but I don't eat black olives. This doesn't mean I scrap a recipe because I cook for those around me to. But what do you think of this one, would you eat it? They look like mini penquins!
Cream Cheese Penquins makes 18
18 jumbo black olives
18 small black olives
1 pack (8 oz) cream cheese
1 carrot (1” around), cut into thin circles
18 frilled toothpicks
1. Cut a slit on one side, top to bottom, on the jumbo olives. Insert 1 teas. cream cheese filling.
2. Cut a small triangle notch in each carrot to form “feet”.
3. Pierce a small notch in the middle side of each small olive. Insert the cut triangle piece removed from the feet to form a “beak”.
4. Stack the small olive atop the large one and hold the “penquins” together with the toothpicks.
