Fall Harvest Recipes Anyone?

Dusty's Winter Soup:

Ingredients:

8 C Beef broth or Boullion
1.5 lbs beef cut into bite sized pieces
2 large onions chopped
4 carrots sliced or chopped
4 ribs celery sliced or chopped
1 med zucchini cubed
15 oz can of white kidney beans or other white bean of choice, drained
15 oz can of red kidney beans, drained
2-15 oz cans of diced tomatoes
1 bunch kale, rinsed, and deveined, torn into small pieces
about 1/3 box of spaghetti noodles

1Heaping Tbls of Italian seasoning herbs OR
1tsp Oregano
1tsp Thyme
1/2 tsp Parsley
1tsp ground Rosemary
4-6 or more to taste garlic toes, crushed
salt and pepper to taste


Brown the beef in a large dutch oven or soup pot in a small amount of olive oil, add the onions, and garlic and stir till onions start to clear...
Add tomatoes and broth and rest of the ingredients except the kale and spaghetti noodles...Simmer until the meat is tender, adding hot water or more broth as necessary, then add the kale, and noodles broken into 3rds...stir well and cook until noodles are done..
Serve hot with grated parmesan if desired and hot crusty garlic bread and a salad...

I sometimes add a small softball sized head of red cabbage sliced into thin shreds to this...

Pixie - is your son a lobsterman? We used to fish the traps out of the surf after storms when we were kids. The lobstermen said we could take all the lobsters we wanted (as long as the law did not find out) as long as we left the traps, lines and bouys....
I remember an incident when my brother had 3 or 4 lobsters stuffed under his shirt....

My Dad had a patient who was a lobsterman out of Kennebunkport. He'd give us lobsters at 1/2 price. We always had a huge lobsterbake after Thanksgiving.
I'm lobstered out at this point.

I'm going to have to try some of these.
I make an Italian sausage stuffed zuchini - cut zuchini in half lengthwise and scoop out seeds, spread a little of your favorite tomatoe sauce in the zuchini, fill with uncooked Italian sausage, cover with a little more sauce (just a little - don't let it spill over the zuchini) and bake til zuchini is tender - 45min or so. I did them in a broiler pan on the grill this summer. Also, as an appetizer - cut the zuchini (small ones) in about 2" segments, and scoop out some seeds but leave at least 1/2" solid on the bottom of each slice. They are like little cups. then fill and bake. You can sprinkle some shredded cheese on for the last few minutes.
