I'm pretty sure you can. I've been trying to get rid of mine for years and it keeps coming back from pieces of root that I miss digging out.
My experience is the same! Just don't make the pieces to small. Did you get your root at the grocery store? If so then you can get a lot of starts.
One thing that I found, I dug a lot of root, ground it in a blender, and froze it. I thought that I would have horseradish whenever I wanted some, WRONG! When I thawed some the heat was gone. This was my only experience so I don't know how it works for others.
I know you should never freeze it. My Grandma had her own and I got to help her, dig,peel, and grate it. Talk about onions making you cry, they're nothing to fresh grated horseradish. Bet it is so good........
She would put the grated in a jar with white viengar and teaspoon of salt and sprinkle of pepper. It would last forever in the refrigator
