Elmira Peach Pie/Cheesecake

Here you go Adina! This is the finished product. Haven't tasted it yet, but sure looks pretty!

Here is the recipe using fresh peaches.

1 pastry for double-crust deep dish pie
2 Tbs butter, cut in small pieces
Peach mixture
May want to cut back as this is my peach pie recipe for 1 single pie
3/4 cups sugar
3 TLBS flour
1/4 tsp cinnamon
1/8 tsp salt
5 cups fresh peaches
2 TLBS butter
1 tsp lemon juice
Cheesecake mixture
2 eggs, slightly beaten
1/3 cup granulated sugar
1 TLBS lemon juice
2 TLBS peach syrup
3 oz cream cheese, softened
1/2 cup sour cream



1 Fit one shell into pan and flute edge.
2 Roll other shell flat and cut into small strips to make a lattice top.
Peach layer:.
1 Slice peaches
2 Combine sugar, flour, cinnamon and salt - Add to peaches
3 Sprinkle on lemon juice - Pour off excess juice and reserve
4 Pour peach mix into pie shell and dot with butter.
Cheesecake layer:.
1 In small sauce pan over med heat, combine eggs, sugar, lemon juice and peach syrup.
2 Cook, stirring constantly until thick.
3 Blend together cream cheese and sour cream.
4 Add hot mixture and beat until smooth.
5 Pour cheesecake mix over peaches.
6 Cover with strips of crust in lattice (over and under) pattern and brush with peach syrup.
7 Bake at 425 F for 10 minutes.
8 Cover edges with foil, then bake at 350 F for 30-35 minutes or until crust is deep golden brown.
