My new (only its second summer) little peach tree is just loaded with fruit. I have picked 30 lbs. and have at least that much more on it. However, they are a little bit pithy. Does anyone know why?-- too much water, too little? They are delicious otherwise.

Probably too many fruit! There's a limit to how much flavour a tree can produce, particularly when young - think of the flavour being spread a bit thin among all those fruit (yes, that's an over-simplification, but a good analogy). If you want better quality fruit, you need to thin them out a bit when they are still small.
