This is where I wil post the some of the recipes from my "Sissy's" cookbook. (Sissy is my Grandmother)
This thread all started from "chit-chat" on the Secret Swap thread that was started by Jordankittyjo. You can look at that thread for some background on the book. Please keep all request for recipies here so that thread can stay on topic.
This book is over 325 pages... so if your looking for something special, just ask! Especially seafood.
But others like soups, meats, cheeses, eggs, party foods... and some WONDERFUL southern desserts.
I'll also add some of the funny stuff she put in here. She says in the prologe of the book that she wrote this to "take to bed with you" (she loves to read cookbooks in bed). All recipes are EASY to make and don't require ANY crazy ingredients.
This first one is dedicated to Jordankittyjo! She's the first "neighbor" I've met here on DG, and the leader of my first "swap"
"REDFISH PONTCHARTRAIN"
6 Redfish steaks at least 1" thick and deboned
1 Cup white crabmeat
8 large fresh mushrooms, sliced
1/2 cup green onion, minced
2 Tbs. lemon juice
1 stick butter or margarine (1/2 for basting, 1/2 for saute'ing)
Salt and pepper to taste
6 lemon wedges for serving
Melt 1/2 stick margarine and add lemon juice. Salt and pepper fish on both sides and place in a shallow baking dish. Saturate fish with half of this mixture. Place under broiler about 3" from heat. Broil for 10 minutes.
While fish is broiling, saute' mushrooms, onion and crabmeat in the remaining 1/2 stick of margarine and set aside.
After 10 minutes, turn fish pieces over in pan; brush with remainder of margarine and lemon juice. Return to oven and broil for 5 minutes, or until golden brown. Serve with lemon wedges.
Serves 6....rarely!
(I'm also going to post MY crab dip recipe. When I make this, I make about 5 pounds at a time b/c it always seems to be scooped up to be taken home. I am also going to post the Oyster Chowder recipe... which has won "Taste of the Bayou" 3 times. I personally don't like oysters, but will eat them in this chowder!)
