They look like huge centipedes, white, longish, but not curled up like a pill bug. More like a big, long white pillbug.. Only in the used coffee grinds bag. Any ideas? At first I thought they were maggots, but they're not. And I know the Jap Beetle Grub. not that either...not sure I wanna open a bucket to take a pic....especially not tonight!

I don't envy you, having to think about what's in that bucket. Sooner or later....
If the length and shape is the same as a pill bug it could be that, as they shed their coats and are white at that stage. They also feed on decaying vegetation, and need to keep moist.

If it's long and thin, is it flat or rounded? Millipedes don't have the same long legs, and are more round in body where centipedes tend to be flat.
There are other things which might use a moist spot to live in, a pic would help.
