In the mood for soup

Judsonia, AR(Zone 7b)

I made some really good loaded potato e soup today.

I peeled and cubed about 4 to 5 pounds of red potatoes
2 carrots chopped up small
2 green onions chopped small
1 lg box 32 oz of chicken broth I used the organic
salt and pepper to taste

I also added, a pinch of thyme, about 1 tbsp parsley and about 1 tbsp chopped fresh basil Just cause DD wanted it in there LOL

we boiled the broth and everything above till the potatoes were soft, took the potatoe masher and mashed about l/3 of the potatoes, we like it chunky.
stirred to thicken, poured in 2 cups heavy whipping cream, or you could use half and half, and then put in 1/2 cup shredded cheddar cheese.

Topped it off with freshly cooked and crumbled bacon bits and more shredded cheese. It was so good


going to make this one day this week

I added the carrots, celery and green onions to the recipe I found off the net. I've been wanting to make chicken velvet soup ever since I had it at the market cafe .


CHICKEN VELVET SOUP
1/3 c. butter
3/4 c. flour
6 c. chicken stock
1 c. warm milk
1 c. warm cream
1 1/2 c. finely diced chicken
Added: 2 carrots finely chopped
1 rib celery finely chopped
2 greenonions finely chopped
Salt & pepper to taste
Melt butter, add flour and cook over low heat until well blended. Add 2 cups hot chicken stock and the warm milk and cream. Cook slowly, stirring often until thick. Add remaining 4 cups of the chicken stock and chicken and heat to boiling. Season with salt and pepper.

I also love brocolli/cheese soup, anybody have a tried and true brocolii soup? I love soups with spinach inside the pot too.
