thanks for all the rat posts. I have a plot in Boston's Fenway ( one of the old famed Victory Gardens). I can hear the cheers for a Sox hit). Tried tomatoes one year: rats waited for peak ripeness and then got 'em all. Now have achillea, rudbeckia, physostegia, hosta, daylillies: have'nt seen a rat all year. Fenway is definitely alternative gardening: first warm day of 2006 the guys across the fence invited me over, broke out a six-pack, and passed some joints, Eat your hearts out suburbanites

Thanks a lot!!!!!!My hubby used to do some work at a supermarket stoarge facility and they have rats there they called wooly monmouths. Huge with really long fur...will not be posting a pic(even if I had one)

i had a friend who had 2 pet rats (named Love and Rockets). This was in the late 80s, when guys wore those Bugle Boy pants with all the big pockets, and the rats would ride in them. (He always said that Rockets was ok but look out, Love bites) It was pretty cute actually - i don't mind rodents as pets.
I had squirrels get into the kitchen of a 2nd floor apt i had in St. Louis - got thru the screen door - yeeesh, what a mess. Never thought they were too cute again. Rats with furrier tails. That bald rat is pretty ugly - i don't get the hairless animal fad - i've seen the cats, and i just feel so bad for them!

Just one of probably a thousand or more recipes. It wouldn't matter if you left something out. It probably would work just as well in a casserole in the oven.

INGREDIENTS:
2 tablespoons olive oil
2 cloves garlic, crushed and minced
1 large onion, quartered and thinly sliced
1 small eggplant, cubed
2 green bell peppers, coarsely chopped
4 large tomatoes, coarsely chopped, or 2 cans (14.5 ounces each) diced tomatoes
3 to 4 small zucchini, cut into 1/4-inch slices
1 teaspoon dried leaf basil
1/2 teaspoon dried leaf oregano
1/4 teaspoon dried leaf thyme
2 tablespoons chopped fresh parsley

PREPARATION:
In a 4-quart Dutch oven or saucepan, heat olive oil over medium heat. Add garlic and onions and cook, stirring often, until softened, about 6 to 7 minutes. Add eggplant; stir until coated with oil. Add peppers; stir to combine.

Cover and cook for 10 minutes, stirring occasionally to keep vegetables from sticking.
Add tomatoes, zucchini, and herbs; mix well. Cover and cook over low heat about 15 minutes, or until eggplant is tender but not too soft.

Serves 4.
