I'm looking for sage, and thought there was only ONE kind of sage out there....now I've discovered there are several varieties, so I don't know which one I need to try to find! I want the sage herb that I can dry and use for spices, etc. Could someone please tell me what that kind is called? Or are all the different varieties useable herbs? I see there is Russian sage, which I seem to favor as far as looks go, but can I use that kind as an herb? Or is it just for looks or what? Help!

According to one of my books, there are 900 species of Salvia (Sage). There are annuals, perennials and shrubs. Chiltern Seeds list 38 varieties for flowers, and Salvia officinalis as a herb, although the book says there are others with medicinal and culinary uses. I should think a herb specialist would list several you might like to try, and I'm sure you could trade for seeds of quite a few different ones here.
