I purchased some Early Wonder beet seeds from Victory Seed (http://www.victoryseeds.com/catalog/vegetable/beet/beet.html). The beets are coming along just fine (http://www.kurtwerks.com/gallery/garden/2007/?image=156) albeit needing to be thinned. My question is how to collect the seeds. Googling indicates that beets are biennial and that seeds can be harvested in the second year. If that's true, I don't know how to overwinter beets (zone 6a - Pittsburgh, PA), so I'd appreciate some guidance. In any event, where would I find the seeds and what is the proper/recommended method for harvesting and drying them for safekeeping until the following year?
