Dahlias will quit if you don't deadhead, I would say deadheading as a rule is a good practice unless you want seed.

There are quite a few ;pants that will produce more late bloom if you deadhead. I cut down all the columbine after their first flush of flowers and even if they don't send up new bloom stalks, they will send up fresh foliage. I use clipper/hedge shears to cut down the bloom stalks of heucheras.
