I have a summer bouquet that we use at church. It has daisy like flowers in it. Will these seeds become viable? How should I let them age? In the styrofoam or should I pull it out of the styrofoam?

No the seeds won't become viable unless they have ripe seeds before they are cut. Seed production in a plant is very expensive to their food reserves, once a flower is cut then it has no access to the food source.
