Best way to store large tubers

A landscaper that I grew a bunch of A. californias and calidoras (persian palm) in the spring saved the plants for me when they dug them up this week, and now that I have these massive things, I am trying to figure out the best way of saving them until I pot them up to grow out in January. There are a lot that are huge bunches that I think that I can pull the smaller tubers away, and they seem manageable to either pot or dry out, but the main stems are really large....
I guess what I would like to know is what is the best way to deal with these plants-anyone have any pros or cons to potting them up right now or should they be allowed to dry out and go dormant for 2 months? And if so, whats the best way to do that?

Heres a picture of a New Guinea Gold- I think I would need a 5 gallon to pot it up. I put a gallon cont next to it so you guys could see how large they are.

Oooohhhh, someone tell me where to get one of those NEW GUINEA GOLDs. Are they hardy in the top of zone 8 ???

thanks Rox for the thread. It was helpful. I started to just pot up the small tubers after ripping them off the larger ones. There are so many of them! I guess reading that thread, that they do not have to go through dormancy.
