Back in the days when I cared about such things, I had a recipe for Zucchini Cake too. It was given to me by an older friend who probaby grew rows of zucchini. Can't remember if it was good or not, but it probably was, as she was a great baker.
2 C flour
2 C sugar
1T cinnamon
1 t baking powder
1 t salt
1 C raisins
2 t soda
1 C oil
2 t vanilla
3 eggs
2 C grated unpeeled zucchini
1 1/2 C chopped walnuts or pecans
Combine flour, sugar, cinnamon, soda, salt, baking powder, oil, vanilla and eggs. Beat until well mixed Stir in Zucchini, raisins and nuts. (Reserve 1/2 C to sprinkle over the top.) Pour in 9 x 13 pan and sprinkle with the nuts. Bake at 350 for 50 minutes.
Bake away ladies.

Oh Brenda! ;) I don't think I'll ever give up on Zucchini........I will plant only one next year tho and will take my chances that I'll have at least a couple.

I'm going to have search for a recipe I received about 20 years ago .......it had coconut and 3 types of chocolate in it. I've searched the house and web but none that I've seen quite match it. If and when I find it I'll post it here.

re grater I've always enjoyed doing ours the old fashioned way but given the numbers I have this year I really should dig out my food processor and give it a try (time to join the 21st century ;).

But then where's the excitement????? ;) No war wounds to take to work (every finger covered with bandages) to elicit sympathy (or laughter ;).
Funny story.
Our first year on the farm with a veggie garden. I planted an entire row - about 80 ft. of zukes. I had only ever seen courgettes - little zukes- We loved courgette season. Well, of course, they grew larger and larger ....and larger. I started stufffing them with rice & hamburger at least once per week,
Finally we started chopping them up -kids enjoyed that - and feeding them to the pigs.
Only ever planted 6 after that first year.

Try feeding a family of 9 with only 2 plants!!!! Forgot to plant even one this year.
Wondering how your pumpkins are doing. Ours in the Guerrilla Garden (GG from now on) are just starting to turn colour. Leaves have fungus/blight something though. Ditto monarda. Feasting on tomatoes. Rudbeckia gone to seed so cut back and now have secondary bloom.

re pumpkins they're doing pretty good now thanks Inanda :) Will update the pic after we go out to water. I noticed three more were turning red the last time we were there.

Empty nesters. Sorry you've lost your labourers.
Now you can have a sewing room, a computer room, so much space now. However, knowing you, the kids bedrooms will stay the same for the next 10 years. I know you. Your kiddos will come home to roost forever, lucky you.

LOLOL DD maybe..........trust me DS is ready to fly (he will only come home if a job is here for the summer....and he can live rent and board free ;). Once Uni is done he will be gone.
