Pruning conifers?

Will the branches continue to grow if you prune them? can they be shaped, and dead branches removed without leaving big holes?

Junipers. I am forbidden to grow yews, as they are poisonous to cows. (We have a dairy farm, and the "girls" do so love their garden tours...) Juniper Old Gold is one that needs a bit of pruning to make it grow out in another direction if possible. Emerald Green Arborvitae, Moonglow Juniper, both have a few dead areas.

Any dead should be removed. For both Thuja's and Juniper's, you can prune on them as far back as the foliage goes but not further.

In other words, never prune behind "live" foliage. They can be sheared, controlled, redirected - but buds only exist where there is needles/sprays of foliage.
