Love that sauerkraut...with or without the wieners. Our dog even eats sauerkraut! We try to have kraut or cabbage of some sort once or twice a week. Of course, we don't work in an office all day or ride on elevators with lots of people, so the other benefits of cabbage don't cause us too much trouble! LOL! Try kraut with brats... really good. Of course, I suppose some people thing sauerkraut is 'for the birds'! LOL!

I've only made sauerkraut once in my life, and that was here in Alaska. It was really good! We can grow some nice cabbage up here in our cool summers. I add a bit of snipped kraut to cabbage rolls, laying it out on the cabbage leaf before I add the burger and roll them up. It really adds to the flavor.

As an adult, I love sauerkraut. My kids detest it, and I can sympathize - it's not something I cared for as a child either. But I can singlehandedly demolish a can, with or without any accompaniment, although I agree that brats, pork chops or roast, or even just an ordinary hot dog make a nice "relish" with the kraut (*grin*)

We had both sets of parents over today for lunch - the youngest is 81, the oldest 84 :) We discussed the article as they are in the "high risk" age group for any type of flu to be really bad. We had such fun talking about sauerkraut ! My DH's parents are 100% Polish and love it straight or done in some Polish recipes they've shared with me over the years. My parents raised us on Sauerkraut with pork ribs or just fried til it turns crispy in a pan - it was cheap eats for sure with 9 of us kids :)

My Mom & Dad went to the Frank's Sauerkraut plant for a visit this summer and brought home their little single serving packets which were sold there for 10 cents apiece. Dad drove over to my office and promptly told me, "Here, you can put them in your desk or purse and just down one anytime." Thanks Dad :)

Terry, I loved sauerkraut even as a child. My grandmother used to let me go out to her shed with her to pick out lunch from the shelves and shelves of canned goods. My first choice was always the sauerkraut!

Years later, when we first moved to Seward, we were introduced to Banic's homemade sauerkraut. They are old time Seward residents who owned a local bar for many years. Though they have all immigrated from Yugoslavia, their bar became the place to celebrate being Irish on March 17 every year. They served cabbage, but it was their homemade sauerkraut that was cured in wooden barrels in the basement, whole head, cored. It was wonderful!

My aunts that lived in Georgia did a lot of kraut making. They would put it in large crocks and it was soooo good. The core of the cabbage was left whole and inserted in the top of the kraut and was such a treat for me to have. The kraut in the stores don't taste at all like the homemade kind. SheVerne

I know it kind of bites your mouth a little, but I too always like to have a little right out of the jar or can before putting it on to cook.

So you guys have probably eaten "mock pierogi", huh? It's so quick and easy it's ridiculous, for those who don't know. Noodles ( spirals are good), cream of mushroom soup, a can of mushrooms and sauerkraut. Embellish if you want, but that's all you need. Heat and eat.

Got a bonus freebie from my gas station today, two free hotdogs, and they had the little individual packets of Frank's kraut along with the mustard, etc. Yum. Free lunch. (Small enough reward considering what I've spent on gas there in the past several months!)

Does anyone eat sauerkraut with sugar on it. When I was little my father always put sugar on his kraut so when the school cafeteria served kraut I always asked for sugar. They wouldn't give it to me and said that was the stupidest thing they ever heard of. It tastes good that way. Of coarse I eat it plain now but every once in a while I sprinkle sugar on it just for the memories.

This is a wondeful German recipe. Ready?

Brown some pork chops with a little salt, pepper and parsely flakes.

Meanwhile, grab a roaster and put a can of rinsed sauerkraut in it.

Then some thin onion slices on top.

Then some peeled apple slices over that.

Forgot to mention you should have opened a can of beer and let it sit around to get "stale". Pour the stale beer over the layers, then place your pork chops on top. Throw it into the oven at about 350 for an hour or so.

Not only does it taste GREAT (with mashed potatoes...yum!), but your house smells fantastic!

I too am a kraut, my heritage is all German. My mother always made kraut every summer, I made a bunch this past summer too. It is the kind you pack into the jars and I was just thinking a good dose of sauerkraut and brats would be a yummy dinner. Fermented foods of all sorts are really healthy for you too. I am going to start making kefir. This is a fermented milk product.

We almost always had pork hocks with kraut.
Another old German way is cooked with bacon greese & vinegar.
My brother has the recipe & makes it for our family Xmas get together.
I'm not to keen on the store bought kraut. To many preservatives ?
Lady at Farmers Market sells the kind made in quart jars. Quite good, but $6 a jar!

I've found you can get close to that home kraut taste by sauteeing onions and fresh cabbage, rinsing the kraut, and dumping it in to simmer together. Often, I brown the meat, then use that pan to sautee, then add the meat on top and simmer til done. I also like to make a brown flour gravy from the leftover kraut/meat juices in the bottom of the pan... and I wonder why I'm so fat!

Weezingreens, your recipe sounds very similar to mine. I've got a big pot of kapusta (sauerkraut) simmering on the stove right now and my house smells like my mama's!

I use half a head of fresh cabbage chopped and a large can of Franks kraut. To that I add some onion (half raw and half sauteed), a bit of tomato, bay leaf, 2 slices cooked bacon chopped, a link of polish sausage and some pork neck bones. I let it all cook till the kraut/cabbage is soft and then thicken the juice with a butter/flour rouxe (?sp). Gonna pair that with a marinated pork roast and some potato pierogi. Just the right meal for a cold windy day like today.

You guys got me going on kraut again. Last night we had brats with kraut. mmmmmm. I bought the saurkraut that comes in a plastic bag, located by the pork in the meat section. It was nice and crisp - waaaaay better than the canned stuff. I think it was $1.18 per bag, which was equal to 2 cans in volume, so not really expensive at all.

Nap, you got me going on the apples and onions added - I already have that on my grocery list for next week!
