I would go with Ruffles. It doesn't demand as much water as some of the others and can take a lot of sun. Xanthosoma saggitifolium is pretty, but to get a nice size, it also needs ample moisture.
I don't know of any ears that are evergreen in zone 8b. Someone else might know.
