I need to know how and when to harvest seeds from my Mexican sunflowers. I have been growing them for a few years but I never save the seeds- I just let the plants die down and they re-seed the next year.

I want to collect the seeds for my Pastor, so I want to do it right- LOL!! I clipped off a spent flower and tried to open it but the prickly things in the center of the flower head really hurt!!

How do I know they're ready and how do I get past the prickly thing?
