critterologist - am very anxious to see your recipe for Greek Pasta salad!
I love to cook, but have always used regular old herbs and spices from the grocery store. I am really looking forward to trying my hand at learning to use the fresh things that I'm growing. While doing a google search on "cooking with herbs"...saw a tip for becoming familiar with the various herbs...they said to take a clean leaf of the herb, and take a bite! Not to swallow, but just chew a bit and really taste it. Thought it was a good idea, and took a nice big bite of my Greek Oregano! Yikes! very peppery! Then read somewhere else, that you can tell if your oregano is the "real" Greek Oregano if it numbs the tip of your tongue...guess mine is the real deal!
Also, about the Purple Sage: my girlfriend and I made homemade raviolli stuffed with a wonderful winter squash, sage, and garlic. It was delicious! In fact, it was so good, we made it to serve 300 people at a wedding reception! They loved it!

Anyone know of a good book for cooking with herbs?
Tracy you and I are in the same boat...we are novices! lol I love growing herbs...wish I could do it from seeds but the little starter plants work better for me. btw I spelled the drink wrong..its Mojitos and would you believe I am a spanish student? lol

DOG...I got my book "HERBS IN THE KITCHEN" and a very nice book I might add. It is going to look good in my kitchen and get a lot of use. What is some of the receipes you used?

I make the green chile salsa (under "cilantro" I think) with peppers I've grown in the garden. Also, I throw mint into choc. chip cookies all the time, but I think this book actually mentions it.
I make the lemon-garlic salad dressing (garlic) -- I add lemongrass to that sometimes. I made the thyme mustard but we found a champagne mustard recipe we liked better. I think I also made the thyme vinaigrette. And the dill mayo.
Seems like I made the Green Goodness dressing as well (parsley). My renowned pesto comes from this book. People love my pesto. My tip: toast the pine nuts for 10 minutes first! ;>)
I'm big on condiments, but flipping through the book again makes me want to go cook! Enjoy. Let me know which recipes you try!
