Ornamental potatoe

I have this 'Marguerite' Ornamental Sweet Potato Vine in water.

The part suspended in water has sprouts. Can I cut this end off and put into soil?

I normally let the shoots get 3-4" long then snap them off and plant them. After putting out so many shoots, the big tater often wilts up and dies. You can use it though to make as many shoots as your little heart desires. :)
