We planted these in May. They were doing fine until July , when the first one died. Now I am losing 2 more of them. What happened??

Have you been watering them every couple days for the first few months?....and have you been watering them at least once a week after that?
When you first plant a new plant, the shrub in this case quickly uses up all it's water in the rootball because it's roots haven't gone out into the surrounding soil. It'll take awhile for the roots to spread into the existing soil and get established. I water my new trees/shrubs fairly often the first year I have them.
The two remaining healthy hollies plus the other healthy appearing plants indicate to me that they have received adequate water and nutrients. I suspect disease, especially in your neck of the woods. here is a sample site with information about diseases in Ilex species. Hope it's helpful.
