Trees for Dogs

I have 2 big dogs - Rottie and 70# rescue. They have existing trees and a pool but I want to plant more trees and/or plants in their large fenced-in area. Any ideas on mulch or possibly trees/plants? I was thinking about large rocks as mulch but the weight and heat... They LOVE to dig and chew!
