What to do with a leggy shrimp plant?

I am guessing it's some kind of Justicia, but I don't know the species - it was a pass-along plant known only as "Shrimp Plant". It is blooming in my greenhouse right now, but it looks more like a flamingo than a shrimp with its very long, skinny legs, LOL.

Can I pinch off the growth at the node where new leaves are appearing? Or is it necessary - will the leaves fill in and I'll have a tall, graceful plant one of these days?

If I do pinch/cut off the branches, would they root? In water or some other medium? Thanks in advance...

Based on the pics and descriptions, I'm guessing it's J. brandegeana. The flowers have a white section to them, along with the salmon-orange color - go figure. But it sounds like I can take some cuttings, making the plants stockier and increase my stock at the same time - a win/win for sure. Thanks for the link!

My shrimp plant produces many young and spreads. I have never pinched and rooted but I bet that would work. I just dig up the new ones and transplant.
