Can anyone tell me if this elephant ear plant is OK? A couple of the big leaf stocks have tuber that's supposed to be underground (like a root), but is actually exposed and sitting on top of the soil. What's causing this, what should I do for it - or is it OK to be that way? I have no experience with this plant.

That’s normal. The corm becomes exposed when it gets large. The root coming off of it are still below ground. Don’t cover it up because the base of the leaves will rot. You are likely about to see new growth.
