Help needed please

Hi there. I am growing my own herbs for both culinary and medicinal use and when harvesting noticed a few things I am hoping to get help identifying and troubleshooting. Pictures are all included. Description is below 😊.

Some if my Holy Basil & Lemon Balm have this black speckling at the back of the leaves. Some of the leaves that have this are fine on the top whereas others have white or brown spots on the top. If I try to remove the black with my finger, some of it seems to wipe off but the leaf looks thinner in those spots.

My catnip has faint white speckling on many of its leaves. Some leaves have it both sides and some just the top.

Just one of the six mugwort plants has developed this yellow and brown stripling.

I had aphids on my borage so I used food grade diatomaceous earth on it but the neighbouring plants got a little on its leaves and despite rain and watering, it won’t come off. The leaves seem to have a white tinge on it ( like the DE powder turned to a paint when wet) so just wondering if I must discard those leaves or are they okay to use. I realize it’s good grade DE but nevertheless, just want some reassurance that DE is really okay if consuming a bit on edible plants.
