How do you keep variegated foliage from reverting back to the all green foliage?

As a lot of old garden programs said - keep the green pruned out else the entire plant will revert. We had variegated hollies and dwarf euonymus at our last house and the green stems grew faster than the variegated parts - it became a real chore to keep the green parts cut off but you do what you have to do...
