What acer (maple) species do you people tap for sap? Any unusual varieties that surprised you?
Also can you speak about experiences tapping other species such as betula (birch) or juglans (walnuts/butternut)?
Maple Trees for Tapping
I have never been involved with making maple syrup (I think they usually use Sugar Maples), but a few years ago in British Columbia I bought some Birch Syrup at a Botanical Garden. I like Maple Syrup much better. The Birch Syrup wasn't bad, but quite sharp in flavor.
My family has used Sugar Maple (acer saccharum). I have my own opinions about why I like to use them. I just wondered if there were people out there using different maple species and might want to discuss it.
What did the birch syrup taste like? I've never had it myself, so I don't know. I've also never seen it sold around here in my area.
Hard to explain, sort of sharp and even turpentinish. It was sweet too.
That doesn't sound very tasty to me.
