I find this guy curled all over the place in my soil. I'm in Southern California but I've also seen it as far away as Colombia. Little orange legs, milky translucent body. It's usually about an inch long or smaller, but in Colombia some were 2 inches diameter when curled and maybe more!
Any ideas?

Soil grub
Most likely a larva (white grub) of a beetle in the family Scarabaeidae. Some of these can be very serious lawn/turf pests when they feed on roots of grasses. Larvae of beetles in the family Lucanidae (stag beetles) can be very similar in appearance, but these usually are found in rotting/punky wood.
