I think it's going to freeze here tonight so I brought my Sweet Potato plant in. It has a very large tuber, but I need help harvesting it. How long do I let it dry and how should I store it after it's dry. I took some cuttings to overwinter but sure would like to save the mother plant.

I just set the plant in a bright window and keep trimmed back til spring..Or, dig the tuber and keep in a cool dry place, planting inside and getting it started to move outdoors..
