Water making fruit too alkaline/not acidic enough?

I live on Catalina Island (off coast of Southern California). I just harvested my first pineapple today. I raised it in a pot.

Like my potted orange tree, the fruit was fairly sweet but not tangy enough. It was just way too mild for pineapple. I put in potting soil for both plants, so it's not a matter of the soil (I don't think). I'm wondering if our water is what is making these too ?alkaline. We have only reservoir water from rain. I suspect it is fairly high in calcium since the island was once underwater.

So, what do you all expect is the problem? How can I correct for it? I'm going to put the pineapple plant in a bed now so the rest of the rantoons can grow.

Where did you get the pineapple you planted? It may be its a different variety than what you are used to.

I would think a pot grown fruit could be less flavorful than commercially grown field grown ones, just as a matter of overall plant vigor.

The most likely cause would be too much water supplied while the fruit was maturing, so a high water content diluting those organic compounds that provide flavor.
