it is popping up in all of my flower beds, gardening beds, and pots... herbs, veggies, etc....

I'm assuming you lived in your house last summer and this plant was not there? If that is the case, I would think it's a type of grass.
That would sure be a broad-leaved grass. Why don"t you post this in the Plant Identification forum (where it ought to be)?
Before you do that, please dig one up carefully and show what the roots look like too.

Look at the spacing between the "plants" in the first photo...it almost looks like some kind of bulb that was planted a certain amount of space away---???

Well that's why I was hoping the OP would respond and give us a clue. If they are a new owner and don't know what as there the previous season, I was thinking it could be alstroemeria.
