I'm hoping its an assassin bug but not sure - I think it is eating my vegetables

I think you're at least close, a nymph of some "bug" like that.
It generally seems true that if you see a number of them, they are eating the plant, but if you see single ones they are predator bugs. (Maybe because predators would eat each other)
