I have white ginger or butterfly ginger growing in my back yard. I would like to bring it in the house while it blooms..can I just cut the stalk and will it survive for a while in water in the house?

Sure you can. I do it all the time. Just cut the stalk a few inches below the "cone", remove all the large leaves, and keep the stalk in water. Changing the water daily will lengthen the time of blooming
Here's a picture of a blooming cone that was taken yesterday morning. My plants really popped with this cool weather, and the flowers are more beautiful now than at any time this year.
