I have 6 pots of angel wing begonias and want to over winter them on my enclosed patio. How much cold can they stand? how much water? and do they need to be cut back? Thanks

They can probably stand 40 to 50 degree nights. Maybe even a few nights below freezing if not watered (where the roots might freeze). It really depends on what kind of cane begonias you have - some are more susceptible (tropical) to cold than others.
If they are growing then water will be needed. If somewhat dormant then water sparingly. You can cut them back if you want to but you may want to wait until spring when they start growing again.
That being said, they would do a lot better in the house over winter - no die back, no cold damage, etc. You can cut them back indoors and start the tops in another pot as well as long as it is warm and you have light.
Here is my tallest (almost six feet) and I chose to keep this growing versus cutting the rest of the canes.
