I'm just learning composting myself but I do know that leaves are called 'browns' and you need a mix of browns and 'greens' to make a good compost. An easy way to neutralize an over use of brown material is to use grass as mulch also. Grass is high in nitrogen.

Occasionally throw in a handful of 10-10-10 and water it in. Kitchen waste is good as well. I don't bag my grass. It all goes back into the yard using my mulching mowers.

You might want to post your question in the forum called Soils and Composting. Bet you'd get more help over there.

I mulch with shredded leaves but that's not the same thing as using compost. I just sprinkle the shredded leaves on top of stuff. And I'd be a little cautious about using the terms 'nitrates' and 'sulfates' as they can easily be misinterpreted.

I also recommend that you check out www.dirtdoctor.com. People in Dallas either love him or hate him but he has a wealth of info on soil, compost, plants, how to plant, etc. on his website.
