A few days ago, I bought one of those Smithfield pre-seasoned/marinated
pork tenderloins..A small one--1.7lbs. just b/c it was only $5.

Just cooked it--and have been snacking on it...BUT--YECH on the seasoning
and marinade flavors. OK--but NOT my bag. SO alien!

Give me a nice, fresh Pork Loin--and you will have a delectable pork roast.

Now I will have to eat this stuff all week--may even get the "runs"....

Easy job cutting up boneless chicken breasts; next time, have them de-bone, then chunk 'em up! =) LOL!! I think I'll have to try curry again of some sort one day...haven't liked it yet though. **shrug**

Tonight is Mexican "Burrito Grande". Maybe some rice on the side? =)

We made rice too, and put some IN the burritos, a la Chipotle restaurant. Then I had a bowl of burrito fillings, without the tortilla. Zucchini on the side.

Since you Guys eat rice so often--have you ever cooked the yellow/Spanish/
seasoned rice? Comes in a small, bright yellow bag.

It is the ONLY rice I like to eat. It tastes good! I serve it with my garlic Lime Chicken.

Funny thing- we had a gallon of milk that's is dated fresh until 7 22 -- yesterday we noticed it was getting lumpy but still smelled OK, not sour?. We decided not to drink it, I left it on the counter overnight, I think I made cottage cheese by accident. ahhahaha. Gave it to Addy yum lapped it up.

But can milk start curdling under refrigeration without smelling sour?

I think it can, Sally, IF it's either been previously frozen, or if it's really close to the freezer section or in the coldest part of the fridge. It can start to "separate" a bit. Give it a good shake and it should all smooth back out again.

I hear "macaroni and Cheese" here a lot.

Here is my recipe that I take to the swaps and that always gets eaten.

It makes more than for one dinner--but it keeps well--and freezes well too.

***************************************************************************

MACARONI, HAM, AND CHEESE CASSEROLE
From: Gita Veskimets

6-8oz. (dry) elbow, bowknot, or any other small macaroni
(cooked per directions and drained)
4-6 Tbsp. Butter or Margarine
4 eggs
1 ¾ cup light cream or 1/2 and ½
½ tsp. Salt and ¼ tsp. Pepper—or to taste for both
1 tsp. Dry Mustard
½ tsp. Paprika
3 cups good, cooked ham in ¼” dice (One lg. ham steak will do)
1 ½ cups shredded, sharp Cheddar Cheese (more is yummy)
1 med. onion—minced
1—10oz. Pkg. Frozen peas (optional) for color

Cheese Crumb topping (recipe at the end)

DIRECTIONS:
***Have all dicing done ahead of time!***
In a 9x11x3 casserole dish (or similar)—(half a disposable foil pan works great):

--Put drained, hot macaroni into the casserole pan.
--Toss cooked macaroni with the butter/margarine.
--Lightly beat eggs with a small amt. of the cream. Add all seasonings and whisk
until well incorporated. Add remaining cream.
--Mix the ham, onion and cheese into the macaroni and pour cream mixture over
the top.

--Sprinkle top with cheese crumb topping. (Can be frozen at this stage).

--Bake in a 375degree oven for 45min.-1 hour until firm and bubbly.
--Serves 8-10.

CHEESE CRUMB TOPPING:

Combine ½ cup shredded, sharp Cheddar Cheese with 2-3 Tbsp. Of fine, dry bread crumbs and 2-3 Tbsp. of melted butter/margarine. Sprinkle over casserole.

Note: Do not fill pan to the top. This may bubble over as it bakes.
This makes a great potluck dish. It makes a ½ aluminum foil pan full
**This freezes VERY well. To use, thaw out in the fridge and bake as usual.

Feel free to be more generous with the butter and cheese--and, make about double the
crumb topping than in the recipe. So nice to have the whole top covered!

I like mac and cheese. I used to love when my Great Aunt cleaned the cheese drawer and made baked. I worked for them and meals were included, hurt me! They ate a variety of cheeses and cold meats with breakfast, so she often had a nice mix. I also never knew how European their breakfast was till we visited Austria.
Made JR and Holly breakfast this late AM, Maple links, scrambled, grits, and Eng. muffins. Then off to errands and street fair, pit beef, pulled pork, all kinds of Asian foods, funnel cakes, cookies, ...you get the idea. So no cooking tonight.

That sounds like an excellent macaroni and cheese recipe, Gita, I will certainly try it! Last night, however, I was wore out, so I wanted/needed the quick route: Kraft! =)

For tonight - I have no idea. Grocery shopping after work, which means I'll get home late and won't be in any state to spend a whole lot of time in the kitchen. I think I should get a ham steak or 3 and make some sort of pasta salad SALAD.. with pasta and ham and cheeses.. Mmmmm!! =)

I was Ultra Pooped after work yesterday (and stopping at the store on the way home), but since I'd already made the marinara over the weekend, I rolled up my sleeves and made homemade Calzones for dinner last night. MAN that's a lot of work, but they sure turned out yummy! =)

Me too. I tried google - it is amazing what you can find info for. Nothing much other than slippery pot pie is the Pennsylvania Dutch version of pot pie. Lots of recipes on-line too, but all look different to me, so it seems like there are LOTS of variations.
