Summer on the Homestead.

Wow! we're both canning today! I am canning 21 quarts of cabbage rolls. I have to get the freezer meats all canned in the next week or so to make room for my beef that's coming, and the hog in a couple months. I also have a turkey in the roaster that I'll can after it's been cooked. We'll have so much canned stuff we won't ever open the freezer!!!

I wish I knew how to can and had the equipment. I think I could learn easy enough. I would much rather have things canned than frozen. How do you process the cabbage rolls?

We have been getting more than our share of rain the last few days. We can use the moisture but it's not just raining. We are actually getting thunderstorms. That is not a usual thing here. Back home it is business as usual to have thunderstorms all summer long. There is flooding around us but we are fine. The only problem it has caused me is med in front of the pony barn. I have had to shovel it several times. The barn is near the bottom of the hill and when they stomp around in the mud, it keeps the water from draining past the barn and it goes into the barn instead. I need to get some gravel n front of the door. I cleaned it up again yesterday and shut them inside before the storms started again. I was hoping the hard rain would wash the rest of the med away without having them out to muck it up. I have not been out yet to turn them out and see if my plan worked.

Quiet here about. You all must be busy.

I have been very busy and occupied with some not so nice business at church and in our family. The two problems are unrelated and I won't go into either of them. But I would appreciate prayers that God's will be done and the innocent be protected.

Been busy here at the house today. Mundane bags like taking the trash to the road, washing clothes and dishes, and cleaning the kitchen. More fun stuff like picking the squash and sweet peppers. Got he peppers diced and in the freezer and the seeds are drying. I put the big dog out on his long chain and turned the pup loose to play with him. Got the ponies out on the grass early. I am keeping an eye on Jolene, the mare pony. She looked to be having a bit of a stomach ache but I moved her around a bit and she had a BM and seems to be fine now. I will continue to watch her but I am pretty confident she is okay.

I have been gathering pawpaws for couple weeks and been peeling those and putting the pulp in the freezer for bread and fritters. I have 12 cups put up so far. I am going to trade a few for some fresh honey.

I made my pawpaw bread this morning. A friend gave me a starter. It did not turn out just right but it tastes wonderful. I made a few changes so I am not sure which change made the difference. I will work on it again in 10 days when my next starter is ready.

Still collecting pawpaws. I traded with my friend today. She brought the honey and a dozen and a half yard eggs. I sent her home with the pawpaws, some pawpaw bread and a jar of mixed pickles. She makes sweet mixed pickles and will bring some to DH.

Pawpaws are all finished and I have turned my attention to Apple's. A friend gave me nearly two bushels of Golden Delicious, Winesap and Arkansas Blacks. I have been cleaning, cooking and freezing. We had Apple slaw at supper with Apple crisp for dessert. I have about half of them done. The ponies are really enjoying the peelings.
