The tips of some of the newer leaves are scarred. Is this because I wasn't watering enough or is this a pest problem? It's happening to more than just this echeveria :(
Scarred Echeveria
It's likely a pest problem. Mites are suspect. Sometimes animals will chew succulent leaves as well. You might spray with a mild organic insecticide and use that on the soil as a drench.
I had a similar problem with a black Echeveria and it went away when I moved the plant to a brighter spot, though it will take some time before the scarred leaves are gone. No idea what it was but you might try giving more sun.
