Here in the southeastern US, another blustery front is pushing across the land, making for some bitterly cold days and even colder nights. It seems like the perfect night to warm us up with some spicy stacked chicken enchiladas with green chilies and melty cheese. And maybe a warm, gooey hot pudding cake or some apple dumplings for dessert.
